Tuesday Night Flounder

This is great for a light dinner on a Tuesday night. It pairs well with steamed broccoli, brown rice and a glass of chilled Charonnday.

Software
1 pound flounder fillets
1 tablespoon lemon juice
1/2 cup grated Parmesan cheese
2 tablespoons unsalted butter melted
3 tablespoons mayonnaise (preferably olive oil mayonnaise)
1 tablespoon minced onions
1/8 teaspoon salt
1 clove of garlic minced
Black pepper to taste
1/4 cup bread crumbs
2 teaspoons dried parsley

Hardware:
1 9" x 13" baking sheet
1 Small mixing bowl
1 Wooden spoon
1 Set of measuring spoons


Directions:
1) Coat fish with lemon juice. 2) Mix everything else except bread crumbs and parsley. 3)Place fish in baking dish. 4) Cover with mixture. 5)Bake at 350 for 10 minutes. 6)Put on the topping, sprinkle on bread crumbs and parsley and broiled for 5 minutes.
